  • 1 cup (240ml) vegetable or chicken broth

  • 1 teaspoon sugar

  • Salt and black pepper to taste

  • 1/2 cup (120ml) heavy cream

  • 1/4 cup (10g) fresh basil leaves, chopped

  • Grated Parmesan cheese (optional, for garnish)

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become fragrant and translucent, about 5 minutes.

  2. Pour in the diced tomatoes, tomato sauce, and vegetable or chicken broth. Stir in the sugar, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 15-20 minutes, allowing the flavors to meld.

  3. Remove the soup from heat and use an immersion blender to puree the soup until smooth. Alternatively, you can carefully transfer the soup to a blender and blend in batches.
