Pumpkin Soup

60min
4 serves

Immerse yourself in the cozy embrace of this creamy delight, where tender chunks of pumpkin harmonize with aromatic spices and a hint of cream. This heartwarming soup captures the essence of autumn, offering a symphony of flavors that dance on your palate. It begins with sautéed onions and garlic, their fragrance infusing the sweet pumpkin chunks as they soften and absorb the rich flavors.

Ingredients:

  • 2 tablespoons butter or olive oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 1 small pumpkin (about 3 pounds or 1.4 kg), peeled, seeded, and cut into chunks

  • 4 cups (946ml) vegetable or chicken broth

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon ground ginger

  • Salt and black pepper to taste

  • 1 cup (240ml) heavy cream or coconut milk (for a dairy-free option)

  • Fresh parsley or chives (for garnish)

Instructions:

  1. In a large pot, melt the butter or heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become fragrant and translucent, about 5 minutes.

  2. Add the pumpkin chunks to the pot and sauté for another 5 minutes, allowing them to absorb the flavors of the onion and garlic.

  3. Pour in the vegetable or chicken broth, ensuring the pumpkin is mostly submerged. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the pumpkin is tender and easily pierced with a fork.

  4. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend in batches.

  5. Return the pureed soup to the pot over low heat. Stir in the ground cinnamon, nutmeg, ground ginger, salt, and black pepper. Simmer for an additional 5-10 minutes, allowing the flavors to meld.

  6. Stir in the heavy cream or coconut milk for a dairy-free option. Simmer for an additional 5 minutes, or until the soup is heated through.

  7. Taste and adjust the seasoning with more salt and pepper if needed.

  8. Ladle the hot Pumpkin Soup into bowls, garnish with fresh parsley or chives, and serve immediately.

Optional Tips:

  • Top with a dollop of sour cream or a sprinkle of toasted pumpkin seeds for extra flavor and texture.

  • Serve with crusty bread or a side salad for a complete meal.

Enjoy this homemade Pumpkin Soup as a warm and comforting appetizer or a satisfying autumn meal!
