  • 6 cups (1.5 liters) chicken broth (homemade or store-bought)

  • 1 cup (150g) frozen or fresh green beans, chopped

  • 1 cup (150g) frozen or fresh corn kernels

  • 1 cup (150g) frozen or fresh peas

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • Salt and black pepper to taste

  • 2 tablespoons olive oil

  • Fresh parsley, chopped (for garnish)

Instructions:

  1. In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté for about 5 minutes or until the vegetables begin to soften.

  2. Add the chicken pieces to the pot and cook until they are no longer pink, about 5-7 minutes.
