Ingredients:
1 pound (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
1 onion, chopped
2 carrots, peeled and diced
2 celery stalks, diced
2 cloves garlic, minced
6 cups (1.5 liters) chicken broth (homemade or store-bought)
1 cup (150g) frozen or fresh green beans, chopped
1 cup (150g) frozen or fresh corn kernels
1 cup (150g) frozen or fresh peas
2 bay leaves
1 teaspoon dried thyme
Salt and black pepper to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)
Instructions:
In a large soup pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté for about 5 minutes or until the vegetables begin to soften.
Add the chicken pieces to the pot and cook until they are no longer pink, about 5-7 minutes.
Pour in the chicken broth and add the bay leaves and dried thyme. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for about 20-30 minutes, or until the chicken is cooked through and the vegetables are tender.
Stir in the green beans, corn, and peas. Simmer for an additional 10-15 minutes or until the vegetables are cooked but still slightly crisp.
Taste the soup and season with salt and black pepper according to your preference. Remove the bay leaves.
Ladle the hot soup into bowls, garnish with chopped fresh parsley, and serve immediately.
Optional Tips:
Feel free to customize this soup by adding other vegetables like bell peppers, zucchini, or spinach.
You can also add cooked pasta or rice to make the soup more filling.
For extra flavor, consider adding a splash of lemon juice or a sprinkle of grated Parmesan cheese before serving.
Enjoy this homemade Chicken and Vegetable Soup as a comforting and nutritious meal, especially on chilly days!
