Ingredients:
8 ounces (225g) fettuccine or your favorite pasta
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil
2 cloves garlic, minced
1 cup (240ml) heavy cream
1/2 cup (120ml) chicken broth
1 cup (100g) grated Parmesan cheese
1/4 cup (60g) unsalted butter
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Cook the pasta according to package instructions until al dente. Drain and set aside.
Season the chicken pieces with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Reduce the heat to low and add the heavy cream, chicken broth, and unsalted butter. Stir until the butter is melted and the mixture begins to simmer.
Gradually whisk in the grated Parmesan cheese until the sauce is smooth and thickened.
Return the cooked chicken to the skillet and stir to combine. Let it simmer for a few minutes until the chicken is heated through.
Season the Alfredo sauce with additional salt and black pepper to taste.
