A timeless favorite featuring crisp romaine, croutons, and a creamy dressing with Parmesan cheese, offering a delightful blend of textures and flavors in every bite.

Ingredients:

  • 1 head of romaine lettuce, washed and torn into bite-sized pieces

  • 1 cup (100g) croutons (store-bought or homemade)

  • 1/2 cup (50g) grated Parmesan cheese

  • 2 tablespoons olive oil

  • 1 clove garlic, minced

  • 2 teaspoons Dijon mustard

  • 2 teaspoons Worcestershire sauce

  • 1 lemon, juiced

  • Salt and black pepper to taste

  • 1/4 cup (60ml) mayonnaise

  • 1/4 cup (60ml) plain Greek yogurt

  • Anchovy fillets (optional, for added flavor)

  • Extra Parmesan cheese for garnish

Instructions:

  1. In a large salad bowl, place the torn romaine lettuce and croutons.

  2. In a small bowl, combine the olive oil, minced garlic, Dijon mustard, Worcestershire sauce, lemon juice, salt, and black pepper. If you like a stronger Caesar flavor, you can add a few mashed anchovy fillets at this stage.

  3. Add the mayonnaise and Greek yogurt to the dressing mixture, whisking until well combined.

  4. Pour the dressing over the lettuce and croutons. Toss gently to coat the salad evenly with the dressing.

  5. Sprinkle the grated Parmesan cheese over the top of the salad.

  6. Garnish with additional croutons and extra Parmesan cheese.

  7. Serve immediately as a side salad or add grilled chicken or shrimp for a complete meal.

Optional Tips:

  • For a vegetarian version, omit the anchovies.

  • You can also add bacon bits for extra flavor and crunch.
