Ingredients:

  • 2 pounds (900g) stewing beef, cut into bite-sized pieces

  • 2 tablespoons vegetable oil

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • 4 cups (946ml) beef broth

  • 1 cup (240ml) red wine (optional)

  • 4 carrots, peeled and sliced

  • 4 potatoes, peeled and cubed

  • 2 celery stalks, chopped

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • Salt and black pepper to taste

  • 1 cup (150g) frozen peas

  • Chopped fresh parsley (for garnish)

Instructions:

  1. In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat. Add the stewing beef and brown it on all sides, then remove it from the pot and set it aside.

  2. In the same pot, add the chopped onion and garlic. Sauté for about 5 minutes, until they become fragrant and translucent.

  3. Pour in the beef broth and red wine (if using). Stir well, scraping up any browned bits from the bottom of the pot.

  4. Return the browned beef to the pot. Add the carrots, potatoes, celery, bay leaves, dried thyme, salt, and black pepper. Bring the mixture to a boil.

  5. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 2-3 hours, or until the beef is tender and the vegetables are cooked through.

  6. About 15 minutes before serving, add the frozen peas and stir until heated through.

  7. Taste and adjust the seasoning if needed.

  8. Ladle the hot Beef Stew into bowls, garnish with chopped fresh parsley, and serve piping hot.

Optional Tips:

  • You can also make this recipe in a slow cooker for even more convenience.

  • Serve with crusty bread or over cooked rice for a complete meal.
